•Egg sauce is a popular Nigerian food made with eggs, chopped tomatoes, chopped peppers, chopped onions, vegetable oil and spices of choice.
•Egg sauce is very easy to prepare for breakfast.
•Egg sauce is almost the same thing as scrambled eggs, but more ingredients are added in preparing egg sauce.
•Fried egg is often confused with egg sauce. They are both made with the same Ingredients, but they are not quite the same. Fried egg is allowed to cake and stick together (not stirred in making it) and also does not consume time in preparing it, while egg sauce/scrambled egg is stirred, so that the ingredients do not stick together and also consume time in preparing it.

4 Raw Eggs
5 Fresh tomatoes
1 Medium onion bulb
2 Seasoning cubes
Fresh peppers to taste
Salt to taste
1/2 tsp Thyme
1/2 tsp Curry powder
3 minced Garlic cloves
Small minced ginger root
3 Cooking spoons vegetable oil

Veggies of choice: ( red/green bell peppers, green beans, carrots, spring onion, or sweet corn)
Protein of choice: (shredded chicken, sausage, smoked fish, sardines, or corned beef)
Crayfish (1 cooking spoon)

Pepper of choice
Spices of choice
Fresh or dry peppers
Onions of choice
Protein of choice
Veggies of choice
Vegetable oil of choice

Break the eggs in a bowl, sprinkle pinch of salt in it, stir very well and set aside.
Wash and chop your tomatoes, peppers, onion to your choice of size.
Wash and slice your veggies of choice into small pieces (only if you are using them to fry the eggs).
Prepare your chopped protein/meat/fish of choice and set aside.

Step 1: Heat your vegetable oil of choice on medium heat for about 1 minute, in your frying pan.
Step 2: Add in your onions and stir-fry to avoid burning, until the onions translucent.
Step 3: Add in your chopped garlic and ginger and stir-fry for about 1 minute.
Step 4: Add in your curry powder and thyme and continue stir-frying to avoid burning.
Step 5: Add in your chopped fresh tomatoes and chopped fresh peppers and stir-fry for 7 to 10 minutes on medium heat. When it is done, the oil will separate from the tomato/pepper mixture and the sauce will not have a raw tomato taste anymore.
Step 6: Add in your veggies of choice and stir-fry for about 2 minutes.
Note: If you are using bell peppers, don’t add it quick, because they tender quickly.
Step 7: Add in your seasoning cubes, salt to taste, other spices of choice and keep frying, untill the tomatoes mixture is completely done.
Step 8: Once the tomato mixtures are adequate fried, reduce the heat to low heat and pour in your whisked eggs on top of the frying sauce and allow it to set for about 1 minute before stirring/
scrambling it. Break the eggs into crumbs as you fry for 2 to 3 minutes. When the eggs have fried adequately, put off the heat.

Egg sauce can be served/eaten along side with (boiled/fried/roasted yam, plantain or potato), white rice, beans, bread, noodles, pasta or moi moi.
